Production Completed

in Hermann, Missouri

Our staple mashbill is distilled offsite in Lawrenceburg, Indiana to our specifications. Barrels age until they’re at least five years old then are rotated down to our production room here in Hermann. The toughest day is when they arrive and we conduct a team tasting to select our single barrels, start matching trios for our small batch or reserving barrels for our experimental or special releases.

Depending on the line, our whiskey either goes straight from barrel to bottle or is finished, blended, or proofed to meet our quality standards. We retrieve natural Missouri limestone filtered spring water from our friends in Stover, Missouri to proof our spirits. Production is completed in our ~560 square foot production room fondly dubbed “The Carriage House”.

What Goes Into Quality Craft Whiskey?

Fine whiskey starts with a solid mashbill. The right yeast ferments carefully selected grains, while limestone-filtered water helps create the foundation for the spirit. From there, distillation transforms the fermented mash into alcohol.

The new-make spirit comes off the still at no more than 160 proof and enters new Missouri oak barrels with a No. 4 char at no more than 125 proof. Our barrels then age in rickhouses for a minimum of five years. As we expand production and our spirit lines we rotate barrels down for production to be completed at our distillery here in the heart of the historic district.

We have 3 different flights available. Our classic Tasting Flight includes two neat pours and a small Old Fashioned.

Neat Pours

Enjoy a pour of your favorite Lionheart spirit neat or on a rock in our comfortable lounge while you talk whiskey.

Cocktails

We’re famous for our Old Fashioned, but we offer seasonal cocktails throughout the year featuring our spirits.

About Our Whiskey

We’d love to answer any questions you may have…here are a few common questions we get.

Can I get a flight without taking the tour?

Yes, you sure can enjoy a flight without the full tour experience. We have a few options to choose from.

Our Tasting Flight is the same flight our tour guests enjoy, just without as much story-telling and the mini Old-Fashioned is pre-made for you (we teach you how on the tour!). 

Our Neat Flight consists of 3 neat pours: our flagship single barrel and small batch rye and that day’s choice pour. 

Our Pick 3 Flight is just that. You select any 3 neat pours from our lineup. This includes special releases, cask or batch strength varieties, along with our other expressions.

Can we split a flight?

Sure! Not everyone wants to consume multiple ounces of whiskey when they’re planning a full day in Hermann—we get it. You are welcome to split a flight with whomever you’re with. We recommend two people per flight so there’s enough to open up the whiskey and tasting each pour multiple times to get the full experience. 

We don’t split the pours, you would share tasting glasses, so pick your partner accordingly.

Do you have any cocktails that don't have whiskey in them?

No, all of our cocktails feature our spirits. Most are made with our Small Batch Rye, but select recipes occasionally call for Single Barrel Rye.

Do you have non-alcoholic or mocktail options?

We offer some delicious craft sodas and teas for our guests who prefer a tasty beverage sans spirits. We can also whip up a fresh lemonade if requested. We do not have a mocktail menu.

I'm not a whiskey drinker, will I like the cocktails?

We specially designed our cocktail menu to appeal to all kinds of different palates! Speak with one of our team members about what you DO like and we can steer you toward this season’s cocktail(s) that you are likely to enjoy.

We have a pretty high conversion rate… so even if whiskey “isn’t your thing” you’re very likely to enjoy a beverage alongside your group. We joke, but seriously we solve this for guests weekly.

What is the difference between Single Barrel and Small Batch Rye?

Our Single Barrel Rye comes from one individual barrel, so each release carries the distinct character of that barrel. It is also not proofed, so Single Barrel is considered barrel (cask) strength. Our Small Batch Rye combines three selected barrels to create a balanced, consistent expression and is proofed to 96.

How many bottles do you get out of each barrel?

It depends. Our Single Barrel expression varies depending on the overall volume at the time of bottling, but 200 bottles give or take. 

Our Small Batch expressions also vary based on volume of the selected three barrels, but the starting proof also changes the final volume greatly as well. Each batch is proofed consistently, so the variance in the amount of limestone filtered spring water that needs to be added to achieve the correct proof impacts our total bottles. We usually expect to product 680-700 bottles per batch. 

Are children allowed in the tasting room?

Yes. Families are welcome, and we offer craft sodas, tea and fresh lemonade for guests who aren’t drinking. Children must remain with an adult at all times. August is also likely to be on duty, so please be aware for any little ones who may not appreciate dogs.

Can I buy a bottle in the tasting room? Do you ship?

Yes, you can purchase bottles in our tasting room/store during business hours. We hope you enjoy our spirits so much you want to take them home or share them to friends and family!

We ship to many states, but not all. Our online store will prevent you from shipping to locations we’re not permitted. *We cannot ship within Missouri, but DO have bottles on retailers across the state.
